Pie & Mash - THERE IS A PIE & MASH SHOP IN ROMFORD AND ONE AT PORTEBELLA MARKET RIGHT AT THE BOTTOM PAST THE CLOTHES MARKET AND OVER THE BRIDGE AND YOU WILL FIND IT ON THE RIGHT HAND SIDE HOPE YOU WILL ENJOY IT. MY HUSBAND LOVES THEM BUT I DON'T GO A LOT ON THEM AS I AM NOT FROM LONDON

Anywhere Else? - Thanks, i know alot of the shop's in London, but I still really want to find one that's closer to where we live in Northampton. Also In London parking is a nightmare, and due to location lots of pie and mash shop's invove paying congestion charges. Does anybody know of anywhere else?

Pie N Mash - I know the one in Romford, but there is a better one in Maldon, Essex......That is a little nearer to Nortampton. Right now I am living in Australia and am dying for some English food, you can't even get proper chip shop chips here, its a nightmare! Anyway I've decided to make my own. I've been searching through the world wide web in search of the recipe for liquor without success.....Can anyone help????

Pie, Mash and Liquor - The best one I know outside London is Whites in Walton on Naze in Essex. Very good. The best one in London is Cooks in West London, Goldhawk Road, London W11 - it has been there years and people queue to get in there.

Pie & Mash - Sorry can't help, in the same boat, moved from London to Norfolk and there isn't one up here that's for sure!! They wouldn't even know what it is and when you tell them they turn their noses up!!! You know another thing that they don't have in Norfolk is pickled onion vineger in the chip shops, they look at you as if your barking if you ask for it!!! strange people me thinks! If anyone knows of a pie and mash shop in Norfolk then offers welcome!

Pie & Mash - I can relate to all those who have moved away from London. I have moved as far away as one is capable of doing and still be on land--I'm in California, USA. *S* I lived in England when I was a little girl and visited often when I lived overseas, and came to love the dish, but being a child of an American Air Force Officer father and a British mom, I was quickly taken away from one of my favourite dishes. I craved this dish when I was pregnant and begged (!!!!!!) my mom to bring it back to me in the states. But to no avail, couldn't do it. Sooo, if anyone can give me a recipe that will come close to what I loved (and haven't had in 20 years), it would be greatly appreciated. NERaphael@adelphia.net

Pie n Mash - I moved from London to cambridge & go to haverhill for my monthly fix of pie mash if not in London..Used to live in East Ham but been ages since been there but always found the one on the high street to be the best by far..wish I could remember the name but was only young when I got hooked. Browns is the shop in Haverhill..not the best but its true pie mash as we know it so im not complaining living not too far away...My parents have been trying to find the true recipe for years but no one would ever let on the secret to the pies or liquor.

Recipe for Green liquor - Hi there Here's one I found. I apologise to any purists who may think that this is not what you would get in a shop, its nice though! Parsley Liquor This is a recipe for the famous green gravy that is served with the East End speciality of 'Pie, Mash and Liquor'. Ingredients Serves: 4 25 Gram Butter (1 oz) 25 Gram Plain flour (1 oz) 300 ml Water (10 fl oz) 4 Tablespoon Chopped fresh parsley Salt and freshly ground pepper 1 Teaspoon Malt vinegar, optional Method Melt the butter in a saucepan. Add the flour and cook for 1 minute. Gradually add the water or stock. Bring to the boil, stirring continuously. Add the parsley and seasoning and vinegar if using. Serve with a minced beef pie and mashed potatoes. You can use chicken stock in place of the water Cheers Kiwilad

pie and mash - Tucked away by harrow green on the leytonstone high Rd is a pie and mash shop which is owned by a family who have been in the trade for over 100yrs. If I remember correctly its called the eel and pie house and was relocated from the bow Road in the late seventies. Went in there to have my first pie and mash since 1968 when my family moved to oxfordshire and i can tell you i was gobsmacked at the price- £1.30 for pie and mash.We had 6pies 6 mash and stewed eels and mash for under a tenner. Couldn't believe anything was so cheap anymore. Are they all so inexpensive? My elderly mum reckoned this was the real McCoy- no sausage and mash or pease pudding in this one just pie, mash, eels and a drink. And she should know, she virtually lived in the bow shop when she was growing up. Anybody else remember the shop in the Bow Road [opposite the Bow church]. I just wish they did p&m mail order!

best pie and mash in london - Manzies is without doubt the best pie and mash in london. It's probably the oldest n all!! There's one in Peckham and another one in Tower Bridge Road in Bermondsey!! Check em out if you are eva in da hood!!! All the rest are following in Manzies footsteps!!

pies - as far as i know the pies r made with minced lamb not beef..the pie trays r stood in water so the top of the pie cooks and the rest of the pie basicaly steams....cook mince with salt and plenty of black pepper..

FAO Help - Have you tried Kelly's Pie and Mash in Bethnal Green?? If not try to get there in your lunch break! Now, very important, coming from the tube station you DO NOT want to go in the 1st Kelly's (there are 2) as that one is rubbish, keep walking down Bethnal Green Road until you get to the 2nd Kelly's...it is simply the best in my humble opinion! Also there is Goddards at Cutty Sark which is nice too.

- Best pie and mash in london is Kelly's in Bethnal Green! There are two down there but the one nearer the underground station is by far the best in London always has been. I have lived on it since I was a boy!

kentish town - I grew up eating pie n mash in Harringtons on the wandsworth rd but go to the 1 in kentish town...it is perfection...(bottom of kentish town rd,take right filter and second left.park up and its just round the corner)....enjoy!!

Manzies pie& mash - I bought some steak pies from Iceland shop, used MASH, comes in containers, & Bisto,s parsley sauce mix, I used to live in Whites grounds, Bermondsey way back, also in Tooting, unfortunately they are only open 10a.m. - 2p.m. now. LIQUOR - When making the liquor i use fish stock or chicken stock or sometime's a bit of both but fish stock i find make's it more like the real thing, Apparently they use the stock from the eel's to make it?

A Cooke - Goldhawk Road W11 - Can vouch that A Cooke Pie & Mash in Goldhawk Road is very good. Went there for lunch today and had Single Pie, Mash and Liquor for £2-50 with Tea at 60p. Food was delicious and piping hot, perfect for a cold day like today. Maybe next time I'll try the eels !

the key - The liquor that goes with this incredible dish consists of water,flour & butter(makes the roux)loads of chopped parsley and salt. I prefer to make it with chicken stock add a little vineger to make a little more sour. - The best pie'n'mash in london has got to be Robins!!! they have 3 shops, 1 in East Ham, 1 in Ilford and one in Basildon in Essex, they did have one in Romford but it shut for some reason. The best I know of outside london is the one in Walton on the naze out in essex it is liscenced so you can have a beer with your pie'n'mash.... Fooking luvly!!!!

pie mash and liquor - the old way of making liquor is to use the the stock from boiling eels. or any fish bones will do.then parsley in it.which gives it the green colour. but how you thicken it a bit i dont know .i come from london and love pie and mash and liqour but the liqour is a secret same as the pies. the pies have no gravy in them.but the pastry is really thin.this is why not many oie and mash shops they all keep it a secret.

pie and mash - i now live in costa blanca spain and miss pie and mash more than any other food.(there is one costa de sol) and if im lucky some one will bring me some from Romford opp old brewery, Morrisons sell frozen one not the same but ok to stop craving. The liquer is made from stewed eels and that is how it thickens none of this parsley sauce rubbish in packets, the pies are as someone suggested made dry mince and cooked in tin with bottom in tray with a bit of water so steamed with baked top thats all im saying if i could get eels would open shop here in spain. best pie and mash is in Romford, Vange and the best one Tooting Broadway in my opinion , well enjoy,,,,

pie n mash in romford - the shop that i know of is opposite the old brewery just along from wollies, unless its moved. i am from hornchurch (just down the road). i am living in glasgow and miss pie n mash. locally its fish suppers only.

pie & mash - we went to Moraira on the costa blanca last year and found that the english admiral benbow restaurant had pie mash & liquor on the menu fridays,as there are a lot of English residents in the area,that come to the local market on saturday. Now for my recipe for liquor, yes i believe that they do use the stock from the eels but we sometimes have to improvise. I Put approx 2 desert spoons of flour 1 desert spoon of margarine 3/4 pint milk good pinch of salt and pepper into a saucepan stir with a wisk until you get a nice creamy white sauce,add plenty of chopped parsley, and a couple of spoons of vinegar to taste,then you get a bottle of green food colouring you only need a few drops to get the colour, while you have been stirring the sauce you will notice that it is starting to get thicker, gradually add some water from the potato,s a little at a time so that you get the right consistency you can add any more pepper and vinegar to taste.I now live in North Yorkshire whwer they look at you as if you are mad if you mention pie mash & liquor.i make this at least twice a month it is still my favourite meal hope this has helped.

Pie & mash shop in Hastings - There is a fab pie and mash shop in Hastings on the sea front. It is the best one I have ever been to with the best liquor ever. There is also one in Gillingham High Street KENT its near Canterbury Street the Somerfields end. Its nice pie and mash with liquor but not as good as the one in Hastings.

me i eat pie n mash in HOLLAND - Reason being after moving here like 14 years ago you have to move some to get the good old food you was used too, well i cracked it i now make my own and also get orders form others here its brilliant it tastes the same and i love the stuff after all i was bought up in london , cant live without itthe children love it, other english here want it 1 or more times a week on there week menu it great as is great bristish food!!! long live the good old tradionale pie , mash , and liquor yummieeeeeeee

RECIPE - Dry cook mince lamb or beef or 50/50 lamb/beef add to hotwater shoo pastry bottoms add pie top and brush top with milk. mash potatoe, do not cream leave firm and slightly lumpy. use potatoe water and fish stock cube small amount of gelatine and cornflour thicken to taste, strain, add chopped parsley non-brewed vinegar white pepper. serve on table with non-brewed vinegar with pickling spices in it, salt and WHITE pepper. Eat with spoon and fork. tea or sasparella to drink.

pie and mash - i do not feel any butter or marge should be used int he sauce whatsoever.you make the sauce either from the potato water and add flour and lotsof very finely chopped curly parsley,if you are lucky enough to get a live eel and they are very rare these days,and costly -pound for pound they are more expensive then fillet steak,then the stock these produce is very good flavoured stock. the pie base is very crunchy and it will contain lard so i do feel its a suet pastry but not as much lard say as a suet pudding, there would be no need for a water bath, as the pies are made in tin pie plates with a raw mixture of minced beef and salt and pepper nothing else-put straight in the tin -not even cooked before,so the mixture of suet pastry and the lubrication of the beef mixture keeps the base of the pie just steamed and the top dries out,do not put a vent in the pie as you want to keep every thing tight and steamed.the potatos are just ordinary boiling ones-do not add butter or anything else.if you are cooking eels remember to cook so that the eel is tender and sweet,serve the lot in shallow soup bowls with lots of vinegar and saxa salt and pepper-short crust pastry bottoms do not work,as puff-i will post my exact recipe for the pie soon-gelatin is also not used in the sauce although every ones taste is and recipes are differant and is great to see-but the principles behind cockney cooking is that the recipes go back a long way,it was simple food and a staple - older people from around the south of london,kent and bromley was not and some still do not enjoy the fusion food of today,although much is said of eastenders loving more spicy food and exotics because of the asian settlements,the cockneys always loved gelationous dishes such as pigs trotters and brawn but thats another subject!!

Liquor recipe - blind tasted on my cockney dad - 1 tub jellied eels (200g) Supermarket 1 splash milk 1 handfull chopped fresh curley leaved parsley 3/4 pint water Salt and pepper 1 teaspoon vinegar (vinnies non brewed condiment is best) teaspoon cornflour Method:- Melt jellied eels and jelly with water and milk in saucepan with plenty of salt and pepper and vinegar. Cover and simmer gently for 30mins to really get eel flavour into the stock. When done, strain / sieve liquid into saucepan and add parsley - bring back to the boil. Mix cornflour with cold water and add to saucepan stirring constantly. Check and adjust seasoning to taste. Alternate method is to use salt water remaining from mashed potato water. There you go...

Pie & mash - The pie is made from suet pastry..It is baked in a tray full of water leaving the tops above to brown and the bottoms to become a pudding..the pie is made up from minced mutton 15% and the rest minced lean beef.salt and lots of pepper...to taste..the sauce is made from the ell stock...you can sub with a can of tuna.milk and flour to thicken and lots of fresh parsley chopped up fine. I also use some of the stock from the potatoes after boiling....(what you have to remember pie & mash was made on the cheep) don't over do it and add the best of everything it just won't taste the same...oh and im also a cockney out of the country for 40 years..good luck and good cooking... magpie@mycybernet.net

Pie and Mash - There is a pie and mash shop in Haverhill, Suffolk. My mum makes the best pie and mash but is finding the eels hard to come by. They used to do them on Romford Market but no one now has the guts to kill them. Does anyone where to get them?

recipe for pie & mash - Every individual pie & mash shop has there own recipe, but the basics are the same, this is my version. The pie crust:- the soft underneath crust of the pie is made using a simple "water pastry" recipe which you can find on the net, the top pie crust can be made or bought using a thin layer of puff pastry (much nicer) which is glazed with a egg & water mixed, or you could use the water pastry for the top crust as well. The mince:- any good quality mince with a 10 to 15 % fat content should be used and ground to a fine or medium texture then cooked for 5 or 10 minutes. Added to this is a little bovril or gravy browning to keep its colour. or fresh beef stock that you see in supermarkets can be used instead. The green liquor:- The water from the boiling of the potatoes (remove the scum that floats on top first) is used with loads of fresh parsley that is liquidized, you can add liquidized thawed frozen peas to bulk it out and to give it that deep green colour, then add finely chopped parsley leafs at the end with arrowroot to give it that slightly shiney glazed look, season to taste and add little white vinagar. The potatoe:- Maris piper or any good quality mashing spud can be used, to give it that smooth texture, just pass it through a potatoe ricer, no butter or milk needed.

Pie & Mash (outside London) - The best Pie & Mash shop outside London has to be The one on Debden Broadway. Debden which is on the Central line near loughton is owned by a family named Kelly's from bethnal green and its as good as Kelly's at Roman Road market. Well worth trying. I live in spain now but always pop back at least once a year and visit debden for my Pie & Mash as often as possible

Pie Mash and Eels in Tooting - London - There is a great pie,mash,licker and eel shop in Tooting, SW17. Its located at 3 Selkirk Road, just a 100 yards or so from Tooting Broadway. My family have eaten pie and mash for years and in a number of different establishments but Harrigtons of Tooting takes some beating. Nice ambience, slightly worn looking, but great service and food, very reasonably priced too. Give it a try if you're that way - better still make a trip there and taste for yourself!

Manzes. The one and only. - Manzes, Walthamstow High St. The one and only. practically as 'original' as the day it was built, complete with sawdust on the floor. You're not going to find better 'pie and mash' anywhere. Saturday is the busiest, go on a weekday. 'Takeaway'service available as well. The mash used to be wrapped in paper if you took it home. Making my mouth water.

Proper Pie & Mash Recipe from someone who knows! - Here is the real authentic recipe from the best pie & mash shops like `Cookes` Kellys``Robins`. The Pie:- Bottom crust on a pie is made from following a suet pastry recipe,(same recipe for a suet pudding but rolled thin). The top crust is puff pastry (this is best), but a suet pastry can also be used. The filling of the pie is medium fine aberdeen angus mincemeat cooked with water and a little gravy browning, season to taste (cook this before adding to pie). If your making this pie at home, use a small old fashioned enamel pie dish (white with blue trim). Cook at 200 or gas mark 5 for 20 to 25 minutes near the top of the oven. The Liquor:- Arrowroot powder(to thicken), Water from the cooked spuds, Mashed marrow fat peas, white pepper & salt, White vinagar,(sarsons or non-brewed condiment from companies called `Drywhite` or `Krunchiefoods`, fresh parsley. The Potato:- `Maris Piper` variety put through a potatoe ricer to get rid of the lumps, (do not add butter or milk). Serve with non-brewed vinagar and white pepper & salt as a table condiment. Jellie eels: Can be bought from www.thefishsociety.co.uk or get in touch with `Lough Neagh Fisheries` in Norhtern Ireland, failing that there are dealers from `Billings Gate` fish market who can post worldwide. The orange drink served from the dispenser in the pie & mash shops is called `SunQuick` from a company called `Co-Ro Foods` based in Denmark, this can be bought from Tesco`s at under two pounds a bottle, but it make 8 litres of drink that is much better than Kia-Ora. best in town - The best pie mash shop by far is robins. It is in East Ham High street e6. I have been to loads and i am the lover of pie and mash.You cannot get a better shop then this one even the celebs go there!!.Would love to be able to make the liquor though. When in there the other day the worker told my son that he will get big and strong eating all the spinach that is in the liquor. Is there spinach or parsley in the liquor?. Does anyone know?.

Pie and mash pastry - The pastry is called hot water crust and is made with lard and boiling water. I think it's the same sort of pastry as they use to make pork pies, but it comes out different because of the way it's cooked.

manzes, - on a visit to walthamstow recently i popped into manzes in the high street, it was really good, not only was the pie & mash exellent, but they did fruit pies as well,plum & rhubarb, i don't think any of the others do this.

pie and mash - Tucked away by harrow green on the leytonstone high Rd is a pie and mash shop which is owned by a family who have been in the trade for over 100yrs. If I remember correctly its called the eel and pie house and was relocated from the bow Road in the late seventies. Went in there to have my first pie and mash since 1968 when my family moved to oxfordshire and i can tell you i was gobsmacked at the price- £1.30 for pie and mash.We had 6pies 6 mash and stewed eels and mash for under a tenner. Couldn't believe anything was so cheap anymore. Are they all so inexpensive? My elderly mum reckoned this was the real McCoy- no sausage and mash or pease pudding in this one just pie, mash, eels and a drink. And she should know, she virtually lived in the bow shop when she was growing up. Anybody else remember the shop in the Bow Road [opposite the Bow church]. I just wish they did p&m mail order!

west ham/upton park pie and mash - when i lived in stepney,used to watch west ham and allways had pie and mash over there.cant remember the names of the pie and mash shops but there was one in queens market,one in green street opposite upton park station and another in the barking road.there was one in west ham lane as well and also another near plaistow station near the queen vic pub.i now live in hertfordshire and if i go back home allways visit a pie and mash in bethnal green road or the roman road.are the pie and mash still open over west ham or have they closed

Essex Pies - Would agree with the ablve comments about Robins and Manzies. They are simply the best. There was an okay pie n mash shop in Chelmsford but it closed last year. The one in Maldon was okay and I'm heading off to Walton today to try that one. There was a pie and mash society a few years ago, don't know if it's still going but they produced a list of shops worldwide. I seem to remember there being one in Perth, Australia.

pie and mash - Tucked away by harrow green on the leytonstone high Rd is a pie and mash shop which is owned by a family who have been in the trade for over 100yrs. If I remember correctly its called the eel and pie house and was relocated from the bow Road in the late seventies. Went in there to have my first pie and mash since 1968 when my family moved to oxfordshire and i can tell you i was gobsmacked at the price- £1.30 for pie and mash.We had 6pies 6 mash and stewed eels and mash for under a tenner. Couldn't believe anything was so cheap anymore. Are they all so inexpensive? My elderly mum reckoned this was the real McCoy- no sausage and mash or pease pudding in this one just pie, mash, eels and a drink. And she should know, she virtually lived in the bow shop when she was growing up. Anybody else remember the shop in the Bow Road [opposite the Bow church]. I just wish they did p&m mail order!

Cookes near Dalston Junction.. - Used to use Cookes near Dalston Junction..shut down and now a chinese eatery..always remembered to look other way when queueing for my Pie & Mash.. as did'nt want to watch man cutting the heads off and gutting the live eels people would buy from shop front.. sawdust on floor, marble tables, terrific grub, live over in Ealing west London.. so will prob try the goldhawk Rd Cookes, not sure if same people though...

Pie and mash - Camden - Jus got back to the office from lunch - pie and mash and liquer on Royal Colleges Street, Camden (just off Camden Road), no one seem to have mentioned this shop yet. Lovely freshly made pies, liquer is a bit pale, lovely mash, and gorgeous treackle sponge pudding in an ocean of custard... It was packed out, the queue running around the block. No tiles on the wall though... But the old wood panelling looks nice.

Make it yourself - The pies are made from hot water pastry i.e hot water and lard heated together mixed with flour and salt.Potatoes are just mashed nothing added.The liquor is fish stock cubes or powder made up with water thickened with flour and water flaked together,tiny drop of green food colouring and parsley ,dry or fresh.Pie mash was a bye product of stewed and jelled eels once upon a time. SOME THINGS NEVER CHANGE (just as well) - Went to HARRINGTONS in tooting yesterday 9/2/07 and its the same as i remember it as a kid my family left london in 1969 when i was 11. The bench seats and table tops are the same the bowls are the same and best of all the pie and mash is the same. i used to bunk off school from franciscan jnrs to have a sixpenny bowl of mash and licker. what ever price it becomes its well worth it. EAST HAM!!! - I grew up in East Ham and often went to the Pie and Mash shop in Barking Road. I miss it so much!!! I keep going on to my partner and friends about how good pie and mash is and how much I miss it but they don't seem to get it. They look at me blankly as if I'm just talking about 'pie' and 'mash' - what's so special about that? I just can't describe that wonderful thin pastry, the lovely mince, the liquor... all drenched with vinegar and pepper. Yum yum. I've heard there's a pie and mash in Hastings but I've never been there. Anyone know of it?

Cockney living in Western Australia - I remember going to a pie and mash in a shop near Earlsfied Station - South London as a teenager (I lived on Aboyne Council Estate), it was great.They also made their own cherry pies as well - yum. Ignore everyones ramblings,the best pie and mash is made at the fiddlers in dagenham and your moaning you can't get pies on a sunday.I drive the thirty miles there from my house in essex and it's worth every mile.Can't get pies on sundays buy them on saturday night and warm them up for crists sake. god I miss them pies and the best mash ever. First meal I can remember in there single pie and mash 1/6 about 7.5p year 1963 and it's as good today as it was then.

Pie and Mash Memories - I remember "Williams" Pie shop in Holloway Road, almost opposite the North London Polytechnic. A triangular shaped shop that narrowed down to one corner seat looking out of the window watching the world go by! Then next door but one into "Atkins" chemist shop for a Sarspirella, hot in winter and cold in summer. We were spoilt for Pie and Mash shops locally. Manzes in Chapel Street Market and another Manzes at Archway. Berts in Copenhagan Street down the "Cally". And the best of all, - Fred Cooke's in Kingsland Road, Dalston, open 'till midnight Fridays and Saturdays too!

Great Yarmouth - Great news - the pie and mash shop has reopened - Tuesday to Saturday till 4.00pm each day. Its in the market place at the far end away from the shops. There is also a fairly decent shop in Essex at Haverhill.

Pie,Mash-n-Liquor memories. - The best ever pie n mash I had was from Georges down the old Hermit Road in Canning Town.I moved away from London quite afew years ago now and miss it desparately.I was weened on the stuff as a baby and would so love my 2 1/2 year old son to try some.I now live on the Lincolnshire coast and you can't get it anywhere up here plus when you mention it to anybody they look at you like you are a nutter!!! Me thinks they are the nutters for looking at me that way!!!!!

THE BEST - I am a member of the pie'n'mash club, in my opinion the only pie'n'mash shop that was the bench mark for all the pie shops was Cookes of Dalston, sadly they closed now I was there on the last night of trade, it was a sad night in many ways, but the perfume, the sound, and the taste of that night will live with me for ever, well done Chris & Fred. hahahaha - i find some quiet funny indeed the guy with the aberdeen angus mince meat hahaha pie mash was made very cheaply i can assure you no aberdeen angus is used a few people on here are close i must say the guy that said 50/50 mutton and mince meat is the closest a little tip remember beef was expensive in them days lamb was not so you didnt get all that much beef in your pies at all also the person that noted about the water baths not being needed you are correct the secret mixture of lamb and mince is put straight into the pie. if you presume by now that i actually do know what im talking about then you would be right. although i could never do something as bad as giving you the exact recipe to one of the best kept food secrets in food to date could i now bye

My Pir & Mash - Being a Londoner, this is MY Recipe, 2lb of lean mince meat ( Lamb is preferred but Beef is OK) Parsley (Dried half a bottle, soaked for an hour, Fresh A packet or about 4 table spoons or Frozen) or to ones taste, Malt Vinegar, one cup full, Corn flour, 2 teas spoons heaped mixed with water, Pasty buy Jus-rol frozen sheets, Put meat in sauce pan just cover with cold water add a little salt, heat and simmer for about 30 mins, Strain AND KEEP LIQUID, leave meat to one side, cool liquid, when cold skim off fat, pour into saucepan, add Parsley, Corn flour and Vinegar heat very slowly, Peel and cook Potatoes, Keep liquid and 1 potato mash this and put into Liquor, add Potato Water if Vinegar is to sharp, For the Pies, use small baking tins, line with puff pastry but prick the base, fill with meat, add 2 teas spoons of Potato water, water around top , put on pastry lid seal and cook until lightly brown (Gas Mark 4-5) for about 20 -25 mins, roughly mash potato, to serve, use a large cereal bowl put pie to one side, fill bowl with mash, pour over liquor, shake on ground white and black pepper, salt and a little vinegar, ENJOY, We had this 19-3-08

pie and mash in london - I have been eating Pie and Mash for as long as I can remember. My earliest recollection was a in a Pie &Mash Eels and liquor shop in Peckham in the early 1960s. It had green tiles around the walls, wooden benches to sit on with high backs so you couldn’t see the table behind you. The wooden floor was covered in sawdust and you ate on a marble table top with ornate carved green iron table legs. The pies were always piping hot and the mash wiped on the plate with a very large spoon and parsley sauce or liquor poured over the top until it ran off the plate. Most people would eat with a spoon and fork rarely with a knife. The Pie and Mash shops were situated not far from industrial or dock areas of London. I was told once that the sawdust on the floor was to assist the sweeping up of eel bones expelled by the Dockers as they feasted. I grew up near Walworth road SE17 and would visit Arments Pie and Mash on Saturday afternoon with a couple of friends, then off for a pint in the Temple bar. Arments was situated opposite East street market. A second shop opened in Westmoreland road, then, many years later the shop opposite East Street closed. I’ve tasted Pie and Mash at various shops. Angel Islington, The Cut, Peckham, the Old Kent road. There is one over in Farringdon and luckily, for me, one in Sutton, were I work. They are all very delicious. However, the one in Croydon is disappointing they fall short with the mash. They use an ‘ice cream scoop’ so two small scoops is one mash. After you dish the meal on the plate you need to cook more mash as I did today. Apart from that, long live Pie and Mash......Bob Croydon

Look up the Page !! - What about Maggie Browns, well, try the one above (printed Pir & Mash, a spelling mistake !!) We had this tonight still very good try it and see. I used to live in Hackey, from there I would go to Cooks and Mensies (in Roman Rd, Bow) on to Wells Street in Hackney, moving on to Chattsworth, then to Londonfields back to Walthamstow and stop at WhiteChappel, this was all around the time of 1964, not sure how many are still there now.

Online Pie Mash - You can buy pie mash online, Manzies do it, i sent some to my parents for their anniversary and they loved it! Living in Yorkshire as i do now, i'm always keen to get to Harringtons Pie Mash shop in tooting (seeings my local one on the wandsworth road closed some years ago) Manzies is the next best thing and being able to have it sent to the north of england just fills me with a sick sense of joy....who needs pie and peas!!!??

Eel and pie shop on Harrow Green Leytonstone - Moved to Margate 7 years ago but was working in Walthamstow, where i grew up, recently. Completely forgot about Manzes in the High St. I would have thought it had closed down by now. Anyway,i tried my luck on the way home and popped to Leytonstone. Deep joy!!!!!!!! Double pie double mash 3 squids. Brought some home for my boys as well. Posted the last one through my neighbours letter box!!!! As said before, don't try and make it. My mums the best cook in the world and even she can't get it right!!!! Going to the Spurs on Saturday so might pop to manzes.

Good old pie and mash yummmm! - Have lived in Australia 44 years now and I used to go to Watney street pie and mash shop all the time with my friends. I wish someone would open up a pie and mash shop here in Perth, so many people here ask for pie and mash. Wouldn't be so bad if you could make it but you need the exact recipe.I am going to the U.K next week and Will be heading to Manzes near Tower Bridge as soon as we check our bags into our hotel. Secret Recipe - My first ever job as a 14 year old was Kelly's Pie and Mash Shop in Roman Road, where the famous Roman Road Market is (East End). After washing dishes for a long time we were allowed to help with the pie and liquor making and yes it has a lot to do with the high temperature of the ovens for the pies, the pies only have mince and gravy with one other secret ingredient. The liquor is easy to make at home, many years ago eel juice was used but boiling water replaced it later on. The colour is not just the pasley there is another ingredient and all you need is boiling water, batter, salt and pasley, the secret is in the mixing or whisking using the correct phrase. I would like to tell you all the whole truth but I am still at 40 years old now, guarding the original recipe and not sharing with masses of people on the net. I do however share with individuals who love the food as much as I.

The Pie Mash secret - I was brought up on pie mash as a kid living in East Ham. As I grew older, it was Pie Mash and a pint before kick off at west ham. Cooksies in High street North was one of the best, but now long gone. A good one now is in Romford, but VERY expensive. My wife and I have tried many times to cook something like the originals, but fail. People say the recipe is closely guarded, but I think the secret is not the filling, its the pastry. I havnt tried this yet, but I think its water pastry cooked in a few inches of water, so its really steamed, the bottom of the pie is that soft pale texture and the top is a bit firmer. I intend to try it this week.

Pie and Mash (Cockney Girl born and raised) - You lot aint got a scooby, Manzes Tower Bridge Road (Bermndsey, South-East London), and Arments (Westmoreland Road, SE Ldn) are the best for Pie mash and lovely green liquor! I'm 22 and was born and raised on the Old Kent Road (still remember the fish and meat man coming round the pubs on a Sunday with Jellied Eeels and Cockles, shame all the pubs shutting down) and my mum used to get us Pie 'n' Mash for dinner every Thursday when i was younger (mummy getting it tonight woohoo), my boyfriend still goes Arments with the boys every Saturday before Millwall at home. You don't get Pie 'n Mash outside London as it's a working class cockney meal, my nans said meat was expensive back then so when you did get hold of it, (or nick it) most of it was probably going off so you'd put the meat in the pastry, and use the liquor and loads of vinegar to disguise the taste. Now it's got right trendy and you got the mockneys queuing to get in on it like it's a badge of honour which i don't understand it was like our version of a curry or spag bowl. The Northerners think it's rotten hence why they turn their noses up, plus the green liquor tend to put people off. They don't even have saveloys up North!!!! Only one way to eat Pie 'n' Mash, you have the pie upside down (crispy side on the bottom) and you slice open the soft bits so you got almost flaps, pour in Sarsons or Condiment vinegar (loads of it) then make a hole in your mash and make a puddle of vinegar and then mix it in so the mash goes a light brown. Now a good bit of Bubble and Squeak is very hard to come by, you gotta get it just right so it's cripsy on the outside, but not quite burnt, yet soft on the inside... but not gooey!

Goddards pie house in Greenwich - Used to go to Goddards loads when they were in Greenwich, gutted when they closed down. They still do pie and mash at the weekend by Greenwich market. Rumour has it that they will soon be doing delivery and bulk orders for parties etc.

How do you eat yours? - How do you eat you're pie & mash? The way since world war 2 for "proper" cockneys is with a fork & spoon (The knives were taken during ww2 to be melted down to make planes)it always makes me laugh when you see dick's in pie shops eating it with a knife & fork and i bet most the visitors to this site eat their pie & mash that way too!!

Makr your own pie,mash and liquor - I wondered for years how to replicate the distintive flavours of this great dish - I now have found a way that seems very near to authentic. I made one with MUtton and one with shin beef. About 10ozs of meat was finely minced and put in a ppan with 3/4 pint of fish stock made with a stock cube. This was simmered for 1 hour and allowed to go cold. the pastry was made with 10ozs of plain flour and a pinch of salt and 4ozs of lard which was melted down and added to the flour with about 2 tablespoons of cold water and all stirred with a spoon the mix well. After allowing to go cold the pastry was rolled out a a pie dish lined, the cold filling added and the lot covered with a pastry lid. THe pie was placed in a tray of water and a bowl of water placed in the bottom of the oven to make for a steam cooking process. the pie was cooked for 35 minutes. Mas was made as is the normal way. THe liquor was made by mixing 2 teaspoons of cornflour in 2 tablespoons of milk to which was added 3/4 pint of the same fish stock as above and heated up and a large handfull of chopped fresh parsley added - the lot being simmered for a while to cook and thicken slightly. I found the resulting taste much the same as the shops and very satisfying. It fed two persons.

best ever!!! - The best pie,mash and liqour can be bought in poplar east london, and I don't mean maureens. Its "pie,mash and eels" on the front, off the main road. I've always eaten there. I live in suffolk now but I try to get there every time I'm back home. Trust me it's the best.

Pie 'n' Mash in Brighton Now! - Hahahaha! I know Cookes in Shepherds Bush, my mates family had a fruit & veg stall in the market, the first stall....Cookes is by the traffic lights in Goldhawk Rd. I'm not a cockney, but from Hammersmith and my local shop was Taylors in Hammersmith Broadway. Only a mile apart but there were differences...Cookes used school dinner mashed iced cream scoops for the mash....Taylors plastered the side of the bowl with mash. Ucowson plaster the mash! Loved an earlier post about WWII and why knives weren't used.....in the late 60s, and to this day I use a spoon! It's just how it's done. Always have a fork....but it never gets used! Hahahaha! I suppose it's there for moral support. I'll check the Steve Jones and add it to ucowson.co.uk thanks!

pie and mash - I remember the pie and mash shop in bow road was the best one around, now it is the one in Roman Road nr St Stevens Road End, the one in Greenwich has gone mores the pitty that was the best one outside of Bow. So I am told, the pastry is made from plain flour a little oil, suet and water, make into a dough and let rest for a while in the fridge, kneed a little then roll. If you can't get eel juice for the liquor use the potato water with chopped parsley and a little plain flour, mix the flour and parsley with a little cold water to make a paste then add the boiling potato water. My aunt used to work in the pie and mash shop that used to be in Stratford, this is what I watched her do when making it at home. Hope it works for you....enjoy.

pie and mash and LICQOUR - Is simple... 3 parts fish stock to 1 part vegetable stock (stock cubes prepared in boiling water are fine). Cook on a medium heat to a rolling boil. Add 30g (or more - check colour to determine) fresh chopped parsley. Then gradually add tiny bits of cornflour, stirring in well and sitting in between, until sauce is good and thick. Add salt to taste, and ALWAYS make sure to add a dash of vinegar on top of it after poured onto your plate.

Theres only one real pie & mash shop. - I've eaten most things over the years but if theres one thing that tastes good its pie & mash. I've been to pie & mash shops loads of times, wasn't brought up on it, but its a close call. Years ago those well known fast food shops such as KFC, Burger King, MacDonalds and the likes never existed, and to be honest I can't say if I would have overlooked them as akid. Kids like to look trendy, and pie & mash just isn't trendy, but, you'll not get a better quick meal, and given the opertunity I'm sure that most kids would prefer P&M anyday if only their mums and dads took the time to introduce them to it. 'What is Pie & Mash', well to answer that is a feat in itself, it can be really good to just plain horrible depending on where you go, and depending on which area of london you come from. I'm a south londoner, so theres a choice, Manzies, or Arments, however if you want to be well looked after, and well fed then Arments in Westmorland Rd SE5 has to be the place. Its not because its cheaper than anywhere else as I'm sure that theres possibly a cheaper place to go, but its not expensive, but it is really really good. Manzies!, loads of people say that manzies is the best, but I'm not so sure, manzies have never really looked as good as arments, manzies always looked like a dirty place to go, they dont use knives, they use spoons, lol, a bit like the one that the Sheriff of Nottingham had in mind for Kevin Kostner in Robin Hood, lol, "I'm use a spoon to cut his heart out", 'Why?', "Because its blunt you fool, it'll hurt more", lol, so if you get the picture, a blunt alliminium desert spoon never really did it for me, and just the one visit was enough, lol. Would I have gone back if they used knives!, nope, the food was discusting, the liquor was runny, it was like pea green water, nothing like what arments make, and the pies, well there was no contest, the mash, well you might think that mashed potatoe is just mashed potatoe, but its not, its weird, but if a pie & mash shop gets it right, theres nothing on the planet that will beat it. So there you go, pie & mash is just magic, but the best in the UK really is Arments in SE5, but dont go there on a monday what ever you do, its shut, just as it is on a sunday, however, if you do go on a monday expecting to eat and on getting there find out that its closed, 'And you'd forgot about it being closed', then dont worry, your not going mad, just join the queue, theres loads of people who have done the same, and when it happens!, its horific, like losing the winning lottery ticket, disapointing, and like you've just been bashed up by Mike Tyson, but you dont have the cuts and bruises to proove it, lol. Oh and to end, the usual warcry on going into arments would have to be, 'Large Pie & Double Mash please, dont go mad with the liquor as I dont want to spill any of it', lol, and if you do like me, buy an extra portion to have another day, forget it, as it'll get eaten later that day as it really is that good, 'The Roving Rabbi'.

happy memories of pie and mash - my first taste was a place opposite westbourne park station way back in the mid fifties, the second most popular place down portobello road market, when we moved from notting hill to east acton of course it was usualy cookes by shepherds bush market. the last time was at basildon it was very good. now we reside in the norfolk/ suffolk borders and we are getting serious withdrawel symptoms.it's been 8 years now. Dad was a true cockney so we was brought up proper. spoon and fork with spiced vinegar. years may pass but the need has to be filled. now a pint of baldwins(walworth high road) sarsparilla and i'll be ok for another few years trapper
